The acid rule, explained so it sticks

Last lesson I told you water bath is for high-acid food and pressure canning is for low-acid, and I said I'd explain what that actually means instead of leaving it at "trust me." Here's the explanation.

The rule is this. Botulism, the thing everyone's scared of, the reason somebody's grandmother's neighbor told you a story once, cannot grow in a high-acid environment. Flat out can't. The spores need low acid, low oxygen, and warmth to wake up and cause trouble, and that combination doesn't exist in a jar of jam or pickles that's been processed right. Acid is the whole ballgame.

High acid means a pH of 4.6 or lower. You don't need a pH meter or a return trip to chemistry class. You just need to know which foods land where.

Naturally high acid, water bath is fine: - Most fruit. Peaches, berries, apples, pears. - Anything with enough vinegar in it. Pickles, relishes, salsas made with the right ratio (more on that later, don't wing your own salsa recipe yet). - Jam and jelly made from fruit.

Low acid, needs a pressure canner, not what we do in this class: - Green beans, corn, most vegetables on their own. - Meat, poultry, anything with meat stock. - Soups, most casserole-in-a-jar type stuff.

That second list is the entire reason pressure canning exists as its own thing. Low-acid food in a water bath never gets hot enough to kill botulism spores, because a water bath only reaches 212 degrees, boiling point, and that's not enough for low-acid food. A pressure canner runs hotter than boiling because it's sealed and pressurized. Different tool, different job.

I'll be straight, this is a gap of mine and I won't dress it up. I don't teach pressure canning. I don't have the confidence to stand up here and vouch for it, so I don't. If you want to do green beans or meat, find someone who teaches that specifically, the extension office usually knows who. I do jam, fruit, pickles, salsa. That's my lane and I'm happy in it.

Now my actual opinion, and I'll stand on it: the fear around water bath canning specifically is mostly misplaced. Nearly every scary botulism story you've heard is a low-acid food processed wrong, usually skipping the pressure canner entirely or ignoring a tested recipe. Work with high-acid food and a tested recipe, follow the water bath steps, and you are safe. Not "probably safe." Safe. I spent my whole first summer canning like I was defusing a bomb, and it turns out I never needed to.

That's not license to get sloppy. A few things genuinely matter:

Follow tested recipes for ratios, especially with anything that isn't pure fruit. When a salsa recipe calls for a set amount of vinegar or lemon juice, that's not a suggestion, that's what keeps the whole jar in the safe zone. Don't improvise ratios until you've got some batches under your belt and know what you're doing.

Add lemon juice or citric acid when a recipe tells you to, even if the fruit already tastes plenty tart. Taste doesn't tell you pH. Tomatoes are the classic trap, borderline enough that most tested recipes have you add bottled lemon juice to land solidly in the safe range.

Don't guess your way through this part. This is the one spot in the whole process where "close enough" is the wrong attitude. Everywhere else in canning I'll tell you to relax. Here, use a tested recipe.

While we're on things people rush: wipe the rim of the jar every single time before the lid goes on. Every time, no exceptions. Nothing to do with acid, it's a separate failure point, but it's the mistake I watch people make constantly because it feels like nothing. One drip of jam or brine on that rim and the seal fails, and you won't know until you're pulling jars off the shelf in November wondering why this one's soft.

On failures that teach you something: my first year I over-tightened every ring like I was sealing a submarine hatch. Felt safer, more secure. It's backwards. The air inside the jar has to escape during processing, that's part of how the seal forms as the jar cools. Cranked down too tight, the air's trapped, and you get jars that look sealed but aren't, or lids that never pop at all. I called the extension office out of my mind confused, and the lady patiently explained I'd been doing the exact opposite of what I thought. Rings go on fingertip tight. That's it. Not "as tight as you can get it."

That's the acid rule, the rim rule, and the ring rule, three separate things that matter for three different reasons. Keep them straight and you're most of the way to being the calm canner instead of the nervous one.
