The float test and what it's really telling you
You've probably run into the float test somewhere online: pinch off a bit of starter, drop it in a cup of water, and if it floats, your bread is ready. If it sinks, you wait.
I want to talk about what that test is actually doing, because used the wrong way it'll run you in circles.
What's really happening
The float test measures gas. Your starter — or your dough — is full of little air pockets from the yeast doing its work. Gas floats. A piece that's puffy with trapped air sits on top of the water. A dense piece, or one that hasn't built up much gas yet, sinks.
That's the whole mechanism. Not magic, not a pass/fail exam. A rough check for "is there gas in here."
How to actually do it
- Fill a small glass or cup with room-temperature water.
- Pinch off a marble-sized bit of your starter — or a bit of dough if you're testing that instead.
- Drop it in gently. Don't stir it, don't push it under.
- Watch a few seconds. Floats, good sign. Sinks straight to the bottom and stays there, not ready yet.
Ten seconds, start to finish.
Where it lies to you
Here's the part people leave out. A piece can float and your starter still not be at peak strength. And a piece can sink and your starter still be perfectly usable, just not at its strongest moment yet.
The float test tells you gas is present. It says nothing about the quality of that gas structure, nothing about flavor development, nothing about how the dough will behave when you shape it. I've had starter float that was already a little past its best moment — all that gas built up, then started to deflate, and the float test doesn't catch it on the way down, only on the way up.
So I treat it as one data point. Not the whole decision.
What I actually watch instead
Here's my real opinion: watch the dough, not the clock, and not just the float test either. Look at the actual thing in front of you. Is it domed and jiggly the way good bread dough should be? Has it genuinely grown, not just a little, but really grown? Are there bubbles at the surface or along the sides of the jar or bowl? Does it smell active — a little tangy, a little yeasty, alive?
Those signs together tell you more than one glass of water ever will.
This matters extra up here. We're sitting around 4,600 feet, and things move faster at elevation, especially in summer when the house warms up. A recipe written by someone at sea level will hand you timelines that don't apply to your kitchen. I learned that one the hard way — my early loaves kept overproofing because I was following somebody else's clock instead of my own dough. Don't do that to yourself.
A story on getting your inputs wrong
Here's a mistake that took me far too long to catch, because it's related to this idea of testing versus assuming.
For about a month straight, my dough was sluggish. Slow rises, weak gas, everything just kind of limping along. I blamed the flour, blamed the starter, wondered if Herb was having a bad month. It was the water. Our tap runs cold up here, and I was using it straight out of the faucet without thinking about it. Once I warmed it — nothing fancy, just took the chill off before mixing — everything changed. Same starter, same flour, completely different dough.
The point: sometimes what looks like an "is it ready" problem is actually an input problem from three steps earlier. The float test can't tell you your water was too cold. It can only tell you what's happening right now, in this cup, with this piece. So don't lean on it as your only source of truth. Use your eyes and your nose too.
A caution
If you're testing dough instead of straight starter, don't leave the piece in the water for more than a minute or so before you decide. Wet dough sitting in water starts to get gummy and waterlogged, and that can make a borderline piece look worse than it is. Quick dip, quick read, move on.
And don't panic when a piece sinks. That's not a failure, it's information. Give it more time and check again.
