Shaping is not my strong suit and that's fine
Full disclosure before we get to shaping next week: I make good-tasting bread that looks a little lumpy. Tight pretty boules still don't come out consistent for me. I'll show you what I do, but I'm not going to pretend I'm great at it. If yours comes out lopsided too, you're in good company.

I dont think shaping doesnt matter... i skipped the tension pulling thing for weeks and my loaves spread out flat every time, like a sad pancake. once i did the coil fold thing right it made a real difference. for me it wasnt a "fine either way" situation lol. could just be my oven though who knows
Julie that "when is it ready" stuff from last week helped me way more than shaping ever will..... I made a little checklist off the poke test and the jiggle test and now I trust my gut instead of guessing lol. Lopsided but done right beats pretty and underproofed every time, for sure.

Taping the poke test notes inside the cupboard is smart, i should just do that too instead of trying to remember it at 6am lol. lopsided loaves taste the same anyway...
