Week 1: Welcome, and the number that matters
Okay so before we even light anything, the number that matters this week is coal count, not temperature. We're going to use 8 coals under, 16 on top for a standard 12-inch oven, and just get comfortable counting instead of guessing. Bring gloves, not oven mitts. See you Saturday.
