bulgogi marinade update
used too much sugar the first time, way too sweet. second batch was perfect. liam actually ate it...
So I made the marinade with the asian pear like she said and mine turned out almost mushy... like the meat basically fell apart in the pan instead of getting any kind of sear. did I let it sit too long? i did overnight because that's what the last recipe I used said, but this one didnt really specify. anyone else run into that or is my pear situation different than what shes using?
That is exactly why I keep index cards with the dates written on them, lol..... first try is never the keeper batch, that's for sure!! glad Liam ate it!! that's a win in my book for sure!! Thanks for sharing!
I finally just made a doc for it after the third recipe i had to redo from memory lol... dates, ratios, what i changed, all of it.
Dustin thinks im overkill but it saved me this week when i went to remake the seollenogtang notes with his mom... small things like that just add up when you dont write them down, i think.
Liam asked for "the good class" bulgogi again tonight i guess its a keeper, for sure lol

mine kept coming out too salty til i backed off the soy a bit, way better now
More pear is the right call, I've been meaning to update the card for that exact reason. Liam actually eating it is basically a five-star review! Glad it's earning repeat status.
Caroline, if you end up updating the card can you post the new ratio here... ill merge it into my doc so im not tracking two versions of it, lol!
Sheila's pear note matches what i landed on too honestly, less sugar more pear for sure. and liam calling it "the good class"... thats basically our five-star review over here lol
