Devin didn't come to cooking through any love of food. It was logistics. His wife taught evening spin classes and wasn't home till 7, so if he wanted to eat before 8 he had to figure something out. He got tired of frozen dinners and started making pasta because it was cheap and hard to fully ruin. The Italian part came slow, from watching an old guy on YouTube make a tomato sauce with five ingredients that beat any chain restaurant. He'll tell you in the first two minutes he's not a chef. He runs a loose, hands-on room where everybody's actually cooking within ten minutes, and he'll probably photograph your plate at the end.
