Wind, Elevation, and Why Guessing Is Normal
The coal count formula gets you close, and then wind and elevation move the target on you. Both of those things are just true here, so let's talk about what to actually do about it instead of pretending the formula is the whole story.
Wind first, because it's the bigger problem
A steady breeze pulls heat off your coals faster than you'd think. Not a huge gust, just the kind of low afternoon wind we get all the time up here, especially anywhere near the canyon mouths. It doesn't put the coals out. It just steals heat off the surface faster than still air would, which means your oven runs cooler than your count says it should.
My first cobbler ever, I did the formula exactly right. Sixteen coals on top, eight on the bottom, for a 12-inch oven, which is what the math says. What the math doesn't know is that I was cooking in a spot with a steady little canyon breeze cutting across the table the whole time. Top of that cobbler stayed pale and the middle never set up, so I panicked a bit and started shoving the existing top coals closer together to concentrate the heat, which is exactly the wrong move. That clumping scorched a ring around the rim while the center stayed raw. I ate the burnt edge pieces standing over the pan so Owen wouldn't see it went wrong. He asked for seconds of the middle part, which had at least cooked by then, bless him.
That night I wrote in my notebook: "16 top / 8 bottom is NOT enough coals in wind." Still true. Still the note I'd give you.
What to actually do about wind:
- Set your oven somewhere with a windbreak if you've got one. A truck, a rock, a picnic table turned sideways. You don't need much, just something to break the direct line of the wind.
- If there's no windbreak and you can feel the wind on your hands, add two to four extra coals total, split across top and bottom, not all one place.
- Check earlier than you normally would. If your recipe usually needs a peek at 20 minutes, peek at 15 in wind. You're not disturbing the bake by lifting the lid once, you're just gathering information.
- If it's really gusty, coals can burn through faster than usual, so plan on refreshing them sooner than your notes from a calm day would suggest.
I still can't give you an exact "add this many coals per mile per hour of wind" formula. Nobody can, not without a lot more equipment than a Dutch oven cook is going to carry around. You add a couple, you check, you adjust again if you need to. That's the whole method. Guessing and correcting is normal here, not a sign you're doing it wrong.
Elevation, the quieter problem
We're sitting around 4,600 feet in American Fork, and that matters more than people expect. Water boils at a lower temperature up here, and baked goods in general take a little longer than a recipe written at sea level will tell you. A cobbler that's supposedly done in 30 minutes at sea level might genuinely want closer to 40 up here. This isn't a Dutch oven quirk specifically, it's just physics, but it stacks right on top of the wind problem, so the two of them together are why your first few cooks might run long.
My opinion on this, and I'll die on it a little: don't trust a sea-level time printed on a recipe card. Treat the printed time as a floor, not a target. Start checking at that time and expect to go longer.
Putting it together
When you're setting up a cook outdoors, ask yourself two questions before you even light the chimney: is there wind, and am I higher than wherever this recipe came from. Both usually mean yes around here. Both mean add a little heat and a little time, then check instead of assuming.
The instinct that'll save you is the same one from that cobbler night, just applied earlier: when something looks off, don't clump coals together to fix it. Add coals in the same pattern you already have, spaced the way they should be, just more of them. Concentrating heat in one spot gets you a scorched ring and a raw middle, which is a very specific kind of bad I'd rather you skip.
One more caution, since we're talking about adjusting coals mid-cook: those coals stay hot a long time after they've stopped glowing bright, so use your gloves and your lifter every time you touch the lid, even for a quick peek. Dry grass around your cook site catches fast in this climate, so keep your ash and spent coals somewhere contained, not just tipped into the weeds.
Before next time: think back to any time you've cooked or grilled outside here and felt a breeze pull the heat away faster than you expected. That's the same thing we're talking about, just with charcoal instead of a gas burner.
